We travelled around the world looking for the most delicate and exquisite flavors to create our Premium quality products. Our agricultural engineers went on a quest for the best coffee crop fields in the Americas, Africa, and Asia, taking into consideration factors such as soil, water, and weather conditions. Each plantation produces coffee of unique features, the same that the consumer can enjoy, thanks to the quality of our process.

Every single stage, from seed planting to harvesting, is critical. That is why we make sure that the beans used in our blends are cropped and harvested under the most refined methods. So coffee remains its personality from seed to cup.

For a premium quality coffee, at this stage we rely on the principles of sustainability and traceability. This will contribute to protecting the environment, conserving biodiversity through improved practices in the use of land, while it has strict control over the entire process. We only harvest ripe coffee cherries coffee cherries are selectively picked by hand, and very green or too ripe and fermented cherries are discarded. This is a difficult and intensive process, but it ensures all our products will be of premium quality.

Once beans have been picked, our coffee experts process them to eliminate any residues, together with the beans outer layers. Green coffee is then obtained, i.e. unroasted coffee seeds. The wet method is used, which, though more demanding, results in a more aromatic and full-bodied coffee.

This complex process consists of washing the beans with water so that any pulp or sticky residue are removed, and the best beans are selected those being the least sour and the best flavored. These coffee beans are then sun-dried for at least three weeks. Next, each bean is polished to improve its final aspect.

After obtaining the green coffee, a series of tastings and controls of the different coffee rest phases, before roasting step, are performed. Thus crop profiles and the characteristics and attributes of selected grains are evaluated.


.ROAST

This is definitely the essential stage, where all the different flavors in our capsules are obtained. Green beans are literally roasted as necessary to get to the desired aroma and flavor. We give each flavor the appropriate time and temperature to obtain the ideal roast to each blend, so the bean expresses its natural characteristic to its maximum extent.

Through the application of heat, the bean loses moisture and start making acidity, while suffering the caramelization of the natural sugars and their size increase significantly. Our expert roaster is the artist who develops different levels of roasting, custom and traditional way, with the aim of highlighting the aroma and distinctive flavor of coffee, keeping the nuances of their origin.

DECAFFEINATION

Decaffeination consists of dissolving and then removing caffeine from coffee beans. To make our decaf coffee, we use a very natural water-based process. In this way, caffeine is eliminated without altering the natural flavor of coffee one of the most important characteristics of our blend.

The seed of the coffee tree contains 2% of caffeine. Decaffeination takes place before green coffee beans are roasted to maintain coffee flavor unaltered while removing the exciting effects of caffeine.

.GROUND

Just like roasting gives the flavor to coffee beans, grinding determines coffee taste at the moment of preparation. That is why grinding must be extremely precise and consistent.

Grinding thickness has a significant impact on coffee brewing. Its paramount to know how to combine coffee grind consistency with the selected preparation method, in order to extract the ideal flavor of roasted beans.

The finer the coffee ground is, the slower the speed of water will be, resulting in a coffee with more body and flavor.

.ENCAPSULATION

Our packaging technology and quality is consistent with the unique properties of our capsules. Each capsule is made of food industry certified, 100% recyclable plastic material. Also, our capsules have a temperature migration certification, i.e. when the material is in contact with hot water, it does not lose its properties or leave any particles that could alter flavor.

We have developed our capsules with an innovative mixed system: closed and open. They have a 99.9% hermetic seal, and are not punctured upon infusion. Through this system, machine needles push the plastic and open it to let the water pass through. This also allows extending the machines life.

COFFEE QUALITY

STRICT CONTROL OF THE CROPS
The best coffee producers located in tropical and subtropical regions are selected by assessing the microclimate, altitude, average level of shade, and collection processes of their lands, in order to obtain strong, healthy plants that will produce only premium fruits. Furthermore, special attention is paid to the products used to preserve the optimum condition of our crops in order not to disturb the trees. As a result, our coffee is certified by Rainforest Alliance, which guarantees that these crops are managed in accordance with rigorous sustainability standards. This partnership also allows us to support coffee producers, so that they live in a respectable way in a sustainable environment.

ROASTING PROCESS
Due to the fact that the roasting timing and temperature define each one of our flavors, we work with the most experienced and well-known coffee sommeliers worldwide, who evaluate the exact time of exposure to heat for each bean, in order to achieve the perfect blend.

CONTROL IN SITU DURING ALL ROASTING STAGES
Coffee experts evaluate the organoleptic characteristics in every stage of the process, so we are able to offer only premium coffee. We conduct a first control where freshly harvested coffee is tasted; after it has been left to brew, we are ready to perform a pre-shipment tasting; and once the coffee arrives, prior to roasting, it is tasted again to verify that there was no alteration. Then, following the tasting sheet, we carry out a metrological control, sensory impressions are assessed, and a physical analysis is completed. This process ensures that the packaged product is exclusively premium quality coffee.

COFFEE QUALITY CONTROL
We have strict safety and health proceedings in place for each item that is in contact with coffee in our plants. Technical and cleanliness controls of our coffee mills are regularly performed.

Our packaging machines, grinders included, are regularly subjected to technical monitoring and maintenance. Furthermore, our final product undergoes a strict inspection process consisting of qualitative and quantitative sampling to meet the standards.

ENVIRONMENTAL RESPECT
Through the Integrated Waste Management System (SIG), managed by ECOEMBES, our packaging materials are recycled and reused to contribute to the sustainable development of the environment. We also recommend sorting
waste by depositing all containers in a place that allows
subsequent recycling.
